羊羹的种类

炼羊羹：弹口、扎实
将寒天放入热水中熬煮至溶解，并加入糖和红豆泥搅拌均匀，煮至水分全部蒸发变为膏状后再放置冷却，后制成的固体状即为炼羊羹。由于大量使用寒天和糖，炼羊羹的口感较有韧度。红豆泥相对较难分解，因此需花费时间仔细搅拌。
羊羹通常做成长方体，如果采真空包装可在室温下存放超过一年，不占空间的体积与高营养价值相当受到肯定。而特殊配方的羊羹甚至可存放至5年之久，是现今相当有人气的紧急存粮。
蒸羊羹：清爽的甘甜
蒸羊羹利用面粉与葛粉作为黏着剂，因此外观较炼羊羹、水羊羹来得凹凸不平，但因为没有使用寒天固化，口感相对更为柔软。
